Mario Martinez-Martinez is Associate Professor at the Department of Food Science at Aarhus University. His research group focused on Plant Biopolymer Science and Technology, using omics to elucidate the complex chemical architectures of plant biopolymers and their binding potential to plant secondary metabolites. His team also has a long-standing interest to understand the fundamentals aspects related to the structuring technologies of plant-based foods. The overarching aim of their research is making food ingredients and final foods more sustainable, nutritious, and healthy.
During the last years Mario's team has also work on polysaccharide-based fully biodegradable coating and packaging solutions, as well as the elucidation of chemo-mechanical and organocatalytic routes to enhance their performance as biomaterials.
