Biography

Mie Thorborg Pedersen is a Postdoctoral Villum Fellow at SDU Biotechnology at the University of Southern Denmark and a guest researcher at ETH Zurich. Her research lies at the intersection of soft matter science and food materials, focusing on how biomaterials self-assemble to create structure and texture in food systems. Her works mainly focuses on with materials derived from marine sources and explores how it can be used in culinary innovation.
Pedersen’s work draws on concepts from food physics and gastronomy, often referred to as gastrophysics, to design new food materials based on an understanding of structure at the microscopic level. Her research includes experimental studies of emulsions and gels, as well as the development of jellyfish-based materials. She uses advanced microscopy and physicochemical methods to investigate how material structure influences texture and functionality in food and biomaterials.
