Biografi
Beatriz Quintanilla Casas is an Assistant Professor at the Department of Food Science, University of Copenhagen. She investigates how chemistry, data science and gastronomy intersect to explain flavour and improve food design. Her research translates the complex chemistry of taste and aroma into clear insights using advanced analytical techniques and machine learning. She has worked on aroma fingerprinting, olive oil authentication and food fraud detection, developing instrumental methods that support and expand traditional sensory panels. Currently, she leads the project EXPLOGA (Exploratory Gastronomy), which seeks to establish a new discipline of “functional gastronomy.” The aim is to create data-driven tools that help chefs, scientists and the food industry design products that are both more sustainable and more enjoyable to eat. Her work blends chemistry, statistics and culinary creativity to uncover the hidden patterns behind flavour.
